Second wave coffee shops, also known as "specialty coffee shops," emerged in the 1960s and 1970s. They also started to introduce different brewing methods such as pour-over and espresso based drinks, which was not prevalent before. Third wave coffee shops, also known as "craft coffee shops," have emerged in the past decade or so. These shops take the focus on quality and education to an even higher level by sourcing and roasting only the highest quality, ethically-sourced beans. They also tend to have a wider variety of brewing methods and a greater focus on sustainability and direct relationships with farmers. Third wave coffee shops also often have a more minimalist aesthetic and a more experimental approach to coffee, with unique blends and creative brewing methods.
